Recipe for 3 dozen oysters


Shallot dressing:

  • 1 shallot
  • 1 tbsp. wine vinegar
  • 2 tbsp. olive oil
  • salt pepper

Herb dressing:

  • 1 branch of tarragon
  • 2 stalks of chives
  • 1 tbsp. tarragon vinegar
  • 2 tbsp. olive oil
  • salt pepper

Raspberry dressing:

  • 1 tbsp. Red berries
  • 1 tbsp. raspberry vinegar
  • 2 tbsp. of sunflower or peanut oil
  • salt pepper


Preparation of oysters
Open the oysters and put them in a dish.
Keep fresh untill you are ready to serve them.

Preparation of shallot dressing
Peel the shallot and chop finely.
Put the shallot in a bowl and add the wine vinegar and oil.
Season to taste with salt and pepper.

Preparation of the herb dressing
Wash, dry and finely chop the herbs. Mix the herbs Place in a bowl with the tarragon vinegar and oil. Season with salt and pepper.

Preparation of the pink berries dressing
Crush the raspberries and place them in a bowl with the raspberry vinegar and sunflower oil.
Add salt and pepper to taste.
