Scallops with Jerusalem Artichokes

This is a really delicious starter where the tender, iodine flavours of the scallops are matched with the delicate, earthy flavours of the Jerusalem artichokes. All of the interest in this dish lies in the crunchy mixture of walnuts-bacon bits-parsley which lifts up the dish and gives it taste and texture. This same mixture, used as a pasta sauce, will make an excellent winter meal.
