Pedro Ximenez

A grape found in Andalucia yielding large bunches of thick-skinned black berries and used to create one of the richest, sweetest, darkest wines in the world.   The centre of production is in the Montilla-Moriles region where fortified wines similar to Sherry are made.  The grape makes fairly high alcohol, low acid wines with high sugar content. To accentuate the richness, the grapes are often dried in the sun to shrivel thus producing PX that is used to sweeten certain styles of Montilla and Sherry.  In Australia, the grape is informally called Pedro and is also used in making sweet dessert wines.
