A Fresh Spring Menu

Spring is in the air and has brought along an array of delicious, new and fresh flavours.

As a source of inspiration, we've flipped through foodie princess Colette Van Doosselaere's fabulous book
to match some of her divine recipes to our favourite Spring wines and bring some new flair to your table.

Wild garlic can be found growing in the undergrowth of our forests or along streams in the countryside, and it tastes... amazing. This aromatic starter calls for a natural wine with a flavourful palate. For this, we opt for a white organic Côtes-du-Rhône Villages:

The Pieterman is a relatively affordable, particularly fine and also very tasty fish. The clémentine adds a fresh spring sensation to the sauce, the star of the dish. To do full justice to the citrus, we serve a white Bordeaux wine:

Château Couhins, Pessac-Léognan, Graves Cru Classé, 2016

The famous cannelés de Bordeaux with a zesty touch of lemon curd, fresh strawberries and raspberry coulis. This original dessert, based on one of the great classics of French pastry, goes wonderfully with a Sauternes:
