Sherry & Port Special

Once known for being our grannies’ go-to aperitif, sherry and port are shaking off their old-fashioned image and are surfacing as, dare we say it, quite trendy.

Yes, we agree, it’s not that kind of us to classify these centuries-old and prestigious wines this way. But let’s be honest, until recently, a great deal of people hadn’t really shown sherry and port the love they deserve. But, finally, this is changing and both are now finding a new appreciative audience, especially among sommeliers and cavistes.

With their interesting range of styles, they are excellent to pair with exciting types of food, whether it is cheese, dessert or umami flavours, so maybe it’s not too surprising these fortified wines have worked their way up to the spotlight and are winning awards and critical acclaim

Whether you prefer a comforting Sherry or an inspiriting Port for an autumnal evening in front of the fire, just as with wine, there are many styles to choose from.     The Crusted Port is a Port blend of two different vintages which have aged in wooden barrels for 2 to 3 years. This Port has then been placed, unfiltered, in a dark Vintage Port bottle where it undergoes a 3-year aging on the site before the sale. The indicated date refers to the year when the wine has been bottled. This dark, ruby-red, Port has an abundance of aromas of blackberries and blueberries, apricot jam with a hint of cinnamon. It is best to carefully decant this Port 2 to 3 hours beforehand. Afterwards you can keep this Port for another week. At its best when served with strong cheeses such as Stilton or Camembert.

    Arguably regarded as the best vintage port made by Johnny Graham, founder of Churchill’s, this is an intense port with beautiful flavours of cassis, berries and licorice mixed with notes of cedar and graphite. There are very fine tannins which give the full body a seductive edge and the port has beautiful freshness in its very long finish. Made from a field blend of old vines including many grape varieties such as Touriga Nacional, Touriga Franca, Tinta Roriz, Tinta Barroca, Tinta Francisca and Tinto Cão this is a traditional port made in a very careful, precise modern style.

    Named after the freshwater spring at the top of the vineyard, this Port is a vintage port in that it comes from wine of a single year that is aged for one year in the barrel and then immediately bottled. This is a big, robust port with an inky dark colour, lots of plum, prunes and earthy aromas with notes of chocolate, cream and cedar. It has lovely acidity which balances the full bodied, generous character with lots of lingering fruit cake flavours in the finish.

    Churchill’s 20 Years Old Tawny Port is an expression of the Douro terroir combined with delicate ageing in seasoned oak casks. The result of this combination is a port full of finesse whilst still retaining Churchill’s characteristic fresh identity. A pale red tawny colour with a golden rim. A delicate nose of almonds and red Moreno cherries. Savoury and rich on the palate, without losing the grip, it’s a combination of age and finesse, finishing long and fresh. This Old Port Wine combines very well with dried fruits, roasted almonds and mature cheeses.

    This is an amazing, deeply concentrated dessert sherry of incredible sweetness and an almost magical freshness made by this small Spanish bodega which has won many awards and makes seriously expressive wines that are up there with the finest sherries. This 20+ year old single solera release has an intense deep mahogany colour; the nose has a depth and complexity that smells of coffee, caramel, nuts, dried fruit, the list could go on and on; the palate, balances rich sweetness with an abiding freshness giving the sherry wonderful poise and balance.The ultimate partner for chocolate desserts or serve drizzled over vanilla ice cream, sprinkled with walnuts. Alternatively just sip slowly as a very complex dessert wine on its own.

    This is the favourite sherry of owner Jan Pettersen and has won many prizes as well as receiving great reviews. It comes from a very old Fino solera (8 years old) and is fortified with brand to 16°-18° before being added to the Amontillado solera where it ages for a further 12 years. This is probably the most serious and austere Sherry in the portfolio with its rich dark gold colour with amber green hints. The wine has a wonderful balance between fresh purity and complex flavours – honey, hazelnuts, almonds, orange peel, caramel with fantastic acidity. A very special Sherry to serve with goose liver paté, tapas, chorizo and pata negra.

    This sherry is made from the native grape, Palomino Fino which comes from older vines on the estate vineyard “Pago Balbaino” of white albariza soils containing 70-80% limestone. The wine is fortified early on in the winemaking process with grape spirit so that the cap of ‘flor’ yeast doesn’t grow (as in fino sherry) and it undergoes oxidative ageing. It is aged for 30 years using the soleras and criaderas system. It is a complex sherry, with aromas such as dry fruit, hazelnuts, chocolate and sweet spices . The sherry’s concentration gives it a very pure, almost saline finish on the palate which make the sherry incredibly appetizing. A beautiful sherry to serve with nuts or aged cheeses.

    For devoted sherry lovers, Palo Cortado is often their favourite category. The Fernando de Castillo Antique range represents the premium wines of the house. All of these wines are single-solera, which means they’re matured in one solera system, rather than being a blend of different soleras that have aged separately. A highly awarded wine which seems still to be reasonably priced, there are very expressive, elegant aromas on the nose with orange marmalade , fresh hints of citrus, roasted nuts with marzipan and caramel. On the palate it is beautifully balanced between full flavours, some spice and figs, and the characteristic acidity and salty tang which distinguish many of this bodega’s sherries.

    De Finos "en rama" zijn speciale fino partijen die enorm worden gewaardeerd door de echte liefhebbers van Jerez. Getrokken tijdens de lente en de herfst van de beste vaten in de solera, wanneer de gistlaag of de "flor" op zijn dikst is. Finos en Rama hebben dragen steeds de datum van botteling en worden enkel in halve flesjes verkocht, dit omdat het beter is om ze na de opening vrij snel te consumeren. Dit kan geen probleem vormen, aangezien ze niet gefilterd zijn, een rijke, droge en natuurlijke smaak hebben met veel flor karakter, aroma’s van amandelen, groene appels en zoute tonen in de afdronk. Kortom, de "en rama" zijn echt gastronomisch Jerez’, om te ontdekken.
