Unlike the other sherries, Pedro Ximenez is produced with the grape variety of the same name which is a sweet sherry. After the harvest, the grapes are dried in the sun for two days and then pressed. The wines are enriched with cognac up to 15% ABV. Then they age in a solera for an average of 12 years. The Pedro Ximenez has a very dark color, almost mahogany. In the nose there are rich and warm aromas of grapes and dates, brown sugar and speculaas. The rich complexity is offset by a good acidity and a long finish. Delicious with vanilla ice cream or as a liqueur after dinner with some nuts.
