For several years, Isabelle Motte, previously a well-known Pomerol wine producer and a great friend, has cultivated with great care a 10-hectare olive grove in the commune of Montalcino in southern Tuscany, right next to the famous Abbey of Sant'Antimo. This is a magic site for olive trees. The stony, clayey Tuscan soil with its very steep slopes enables the century old olive trees as well as the newly planted trees to grow in perfect conditions and produce olives of great quality. BACCIOLO olive oil is produced from a blend of five different varieties of olive: Olivastra, Leccino, Pendolino, Frantoio and the celebrated Moraiolo which makes up 70% of the blend. It is completely organic and unfiltered. Great attention is paid to each stage of the production process : for example to harvest the olives, BACCIOLO uses a machine which serves like an immense umbrella to catch the olives without them being bruised or harmed and which can be moved around the slopes very easily to ensure the olives are picked at optimum maturity. Each evening, the olives harvested that day are brought to the olive press where they are processed immediately. The oil is then transported back to the domain where it is transferred into stainless steel vats. After a month of stabilisation, the olive oil is bottled without filtration. Released while still very fresh, it can be enjoyed for two years after the date of the harvest. Isabelle has made a unique bottling for THIENPONT clients, originating from an adjoining parcel planted entirely with old Moraiolo olive trees called Poggio d'Arna which historically was known as Poggio d'Oro which translates as the golden hillside.
