Passorosso wordt gemaakt van Nerello Mascalese druiven, samengesteld uit wijnstokken van verschillende hoogtes en bodemsoorten. De wijnen rijpen in grote, neutrale eiken vaten en zijn ongefilterd. De interpretatie van de Nerello Mascalese is helder, puur, roodfruitig, mineraal en kruidig, en met het ouder worden verliest hij zijn kleur en krijgt hij exotische aroma's van kamfer, sandelhout en specerijen. Het wijnjaar 2020 was vrij koud en nat in Sicilië, dus werd de wijn eind oktober geoogst. Deze wijn is vrij licht met een licht bittertje van zure kersen dat in evenwicht wordt gehouden door puur rood fruit en specerijen op de betoverend elegante afdronk.
