Heartwarming Flavours

As temperatures have dropped over the past few weeks, the gradual shift from the soft warmth of the autumn sun to frosty mornings is calling for an update of our wardrobe, as well as our grocery list and, of course, our wine selection.

Now, we long for heartyspicy flavours on the table and in our glasses that warm both our body and soul. Below are some of our favourite wine picks paired with delicious recipes to enjoy this season.

To inspire & delight, we encourage you to try these delicious recipes yourself, using cooking queen Colette Van Doosselaere’s second cookbookColette 2.

Enjoy!

Enoki casserole with red onion

When thinking of winter delicacies, you can' t forget mushrooms. Here, we opt for a savoury preparation of elegant Enokis that you whip up in 10 minutes. This dish calls for a red, fruity wine with spicy notes that enhance the exotic flavours. We suggest the Liberta, a Super Tuscan from Fattoria I Collazzi.

Ibérico pork with cocoa

Colder days make the perfect excuse to indulge in delicious sauces. Unpack with an original pairing of cocoa and tender Iberico pork. In terms of wine, you don't have to search far at times. We stick to Spain with our Rioja The Charge, which blends wonderfully with its spicy notes of coffee and cocoa.

  1. 0.75l
    The Charge
    Tempranillo/Garnacha Rioja D.O.C.
    0.75l Red
    €9.20 €7.60
This is a pretty, exuberant wine which comes from the Rioja Baja. It is bright and fruity on the nose with very attractive, juicy, cherry flavoured, Tempranillo fruit. Sweet and fresh with red berry, spicy flavours with a touch of coffee and pure chocolate. On the palate there is refreshing acidity balanced by fine vanilla flavours from aging in a mix of American and French oak. There are delicious flavours in the finish and an abiding spicy, finish. The Charge red is made from 70% Tempranillo and 30% Garnacha grapes, harvested mid-September. Drink young alongside roast lamb, barbecues and stews.
Gingerbread cream with clementine

Especially in the winter months, we crave some colour on our plates. Unite warm, spicy flavours with zesty clemantines for a real pick-me-up. In the glass, we opt for a round, creamy wine: Churchill’s 20 Year Old Tawny Port.

  1. 0.5l
    Churchill's
    20 Years Old Tawny Douro
    0.5l Red
    €29.30 €24.21
Churchill’s 20 Years Old Tawny Port is an expression of the Douro terroir combined with delicate ageing in seasoned oak casks. The result of this combination is a port full of finesse whilst still retaining Churchill’s characteristic fresh identity. A pale red tawny colour with a golden rim. A delicate nose of almonds and red Moreno cherries. Savoury and rich on the palate, without losing the grip, it’s a combination of age and finesse, finishing long and fresh. This Old Port Wine combines very well with dried fruits, roasted almonds and mature cheeses.
